15 Min stove-top mac n cheese

Mac n Cheese, yeah i love my macaroni, its one of my favourite comfort food, and when i was introduced to mac n cheese i thought God just made my mac world better, but when i read the traditional mac n cheese method, i was not not very happy with the prep time, i am used to having macaroni prepared real quick, best is just tossed in a lot of butter and some garlic! Thats the reason i never tried making mac n cheese myself, somehow i was way too comfortable with the garlic butter macaroni snack.
One of my food porn browsing days on foodgawker i bumped into a stove top quick easy peasy recipe of Mac n Cheese here and i simply fell in love with the idea, also i always wanted to try out the egg yolk method for a light white sauce, and i had to give it a try. One lazy sunday morning and i knew what did i want for breakfast. And boy i was elated by the results, quick and with a little alterations for my style and it was awesome, one of those quick fix solutions for lazy sunday mornings. Cant believe a quick fix like this can end up to b a rich and creamy mac n cheese.


  • 1 packet elbow macaroni
  • 3/4 cup milk 
  • 1 Tbsp butter
  • 1 onion finely chopped 
  • 7-8 cloves garlic finely chopped
  • 1 tsp honey mustard
  • 1/4 tsp salt, or to taste
  • 2 egg yolks
  • 2 tbsp fresh cream 
  • 2 tbsp cream cheese
  • 1 cheese cube grated
  • Freshly ground black pepper and chilli flakes and oregano for garnish.

Directions for Mac n Cheese

1. Cook the pasta as per the directions on the package until cooked or just past al dente, and drain. 
2. Cook the sauce while the macaroni is cooking,  in a medium pan, heat the butter, add the garlic and onion and fry it for a minute or two until golden brown. Add the salt and the pepper and also half the milk at this stage. 
3. In a mixing bowl, whisk together egg yolks with the rest of the milk. Now add the cream to the milk mixture in the pan, when mixed, add half of it to the egg mixture, whisk well, then add this egg mixture to the pan.
4. Cook mixture over medium low heat, stirring constantly, for about 3 minutes, you will not get the egg smell anymore. 
5. Now add all the cheese, the honey mustard and drained pasta to this sauce mixture and gently toss mixture with a rubber spatula until cheese has coated it all. 
6. Serve immediately, garnish with some more grated cheese, black pepper and oregano.
