This Grilled Pineapple Raita is a celebration of summers at our place. Come the great Indian summer and we all crave for something that’s lighter on our tummies. Raita is one such wonderful dish that can substitute for a side dish with pulav or you could even have it with some parathas. Boondi raita, mixed veg raita, beetroot raita, and the list goes on.In the long list comes a surprisingly yummy raita, a pineapple raita.
Its a regular at our home, be it for a cozy sunday afternoon lunch or when there are guests at over. Today, we’re sharing a raita recipe but with a twist. We’ll be making a grilled pineapple raita. Grilling the pineapples just on a girdle on stovetop or in the oven, gives it a whole new dimension and how, loved this variation, and i hope you like it too. Without much ado, below’s the recipe.
Ingredients for grilled pineapple
- 2-3 round slices of pineapple cut into smaller, vertical chunk
- 2 teaspoons butter
Ingredients for Raita
- 1 cup yogurt
- 1 tsp roasted cumin powder
- 1 tsp red chilli powder
- 2 tsp powdered sugar
- Salt to taste
- First, grill the pineapple with some butter in a pan. Make sure it’s charred from both sides. Let itcool.
- Mix all the ingredients for the raita in a bowl. Add pineapple pieces.
- Serve chilled
Swati’s memory .. “My first memories of this raita was in a small restaurant in Khar, Hotel vishwakarma, which used to serve the best vegetarian food, rustic, but doing full justice to food. The name pineapple raita made us skeptical but when our landlord, venu, who was our local expert, vouched for it, there were no doubts. It was such a pleasant surprise, sweet pineapples, specs of chilli powder and jeera floating over it, to make it spicy, was the best accompaniment to the vegetable pulao.”
